Zucchini pasta with pesto sauce



Ingredients:
1 zucchini
5-7 basil leaves
1/2 Tbs olive oil
1.5c spinach
1 T nutritional yeast
2 T pine nuts
3 Tbs water
pinch of salt
Veg Cuisine (brand) soy feta "cheese" (if you can't find that, you can use nutritional yeast)

Directions:
-With a vegetable peeler, peel zucchini into noodles
-For pesto sauce: In blender -> basil, olive oil, spinach, water, and salt, pine nuts, and nutritional yeast. Blend
-Toss noodles with pesto sauce and top with vegan feta or nutritional yeast
