Pumpkin pie

Pumpkin pie in August?! Pumpkin is delicious at any time of the year! I was longing for something pumpkin flavored, so I whipped up a recipe for pumpkin pie this morning to enjoy later! Enjoy it with me and treat yourself to some awesome pumpkin pie!



Crust:

1c almond flour
1/4c (melted) coconut butter
4 packets of stevia
1/4 tsp salt
1/4c water

Mix with your hands (that's more fun and gets the job done!) and then mold the crust onto a (greased: 1 tsp oil) medium pie ramekin.

Bake the crust at 400 degrees for 10 minutes.

Filling:

1 + 1/2 cups of canned pumpkin puree
4 packets of stevia
2 tsp baking powder
1/4c almond flour
1 tsp cinnamon
1/4 tsp salt
1 tsp vanilla extract

Mix it up and spread the filling evenly over the crust.

Put it back into the oven at 400 degrees and bake for 20-25 minutes.

(Note: the pie might be slightly mushy if you poke it while it's still hot, so let it cool in the refrigerator for a couple hours and it will harden to delicious perfection)!
