Easy tempeh sweet potato avocado salad

Looking for something easy and quick to throw together for a meal? Here it is!






Directions:

-Steam a sweet potato in the microwave.
-Bake 3 ounces of tempeh at 400 degrees for 15-20 minutes and season with salt.
-Remove skin from sweet potato, chop, and lay on a bed of lettuce (and other veggies if you'd like).
-Put the tempeh on top
-And in the middle, put 1/4 mashed avocado.

Done!
