Mexican bean burrito with cheezy yellow zucchini

I love burritos! Before I was a vegan, I used to eat burritos loaded up with sour cream, cheese, etc. Never in a million years did I think I'd be making vegan burritos that are 100000% more delicious!



Directions:

Take 1/2c cooked beans and put them on a warmed large tortilla.
To that, add 2 Tbs salsa and 1/4 of an avocado, sliced.
Then roll it up!

Cheezy yellow zucchini:

Steam 1 yellow zucchini and season with salt and 2 Tbs nutritional yeast.

Enjoy!
