I can't believe they're healthy - pumpkin muffins!






















{Makes 3 medium/large sized muffins}

Dry ingredients:
1c whole wheat flour
2 tsp baking powder
2 tsp cinnamon
1 Tbs ground flax seeds
5 stevia packets

Wet ingredients:
1/2 c canned pumpkin puree
1/4c almond or soy milk
1 tsp vanilla extract
3/4 of a banana - mashed

Fold wet and dry ingredients.

Grease 3 holes for the muffins to go in with 1/4 tsp oil in each

Fill each with the batter and bake at 350 for 20-25 minutes
